Curry Chicken Salad Recipe 

   Today I will show you how to make healthy Chicken Salad. This is a cool and refreshing salad to prepare at home. This is very filling and healthy and at the same time it is tasty also with the combination of tendered chicken vegetables, perfect dressing with some herbs in it.

 Ingredients For Curry Chicken Salad Recipe :


  • 1 Big boneless chicken breast salt to taste pepper to season
  • 1 tbsp ginger garlic crushed
  • 1 tbsp olive oil
  • 1 tsp vineager
  • 1 tsp dried thyme
  • 1/2 tsp dried thyme
  • 1/2 tsp red chilly flakes
  • 3 tbsp light mayonnaise
  • 3 tbsp thick low fat yogurt
  • 2 tsp lime huice
  • 1 tbsp mustard paste/sauce
  • 2 tsp worcestershire sauce
  • some fresh cilantro
  • 1/4 cup dry parmesean cheese
  • 1 medium onion chopped
  • 1/4 cup chopped celery
  • 2 medium lettuce chopped
  • 6-8 cherry tomoatoes halved
  • 1/2 cup crutons
  • some toasted walnuts and almonds



 This is great for lunch or even for suppers This satisfies the taste buds with all the nutrition intact So let's see what you need for this Ingredients First marinate the chicken breast with some salt Pepper, ginger garlic, little olive oil vinegar, dried thyme, you can also use fresh thyme Red chilly flakes, let it marinate and coat on all sides Spread out the marinate evenly Let it rest for around 15-20 mins Start preparing the dressing for the salad In a large bowl, add the mayonnaise Add the yogurt, I am using the thick yogurt.

 The combination of both really gives a nice and creamy texture to the salad. Next add the lime juice Olive oil, mustard sauce, Worcestershire sauce Fresh cilantro and mix well Mix little salt as well, make a thick yet flowing consistency Put it in the fridge to chill In a bowl, mix in the onions, lettuce, and tomatoes You can use other vegetables of our choice as well Now heat olive oil in a nonstick pan Place the chicken breast onto it. 

Let it cook on each side for 2-3 mins Flip it to the other side and check if it has done Pork a knife into the chicken to make sure it is cooked Once done and if it gets good golden brown color Remove it onto a plate and let it cool down a bit. Cut it into strips Now comes in the assembling part Mix the vegetables, chicken strips into the dressing and give it a good mix to coat well You can also check for salt over here.

 Also, add in the celery Add in the walnuts, almonds over here Add the croutons and mix well. Add in the Parmesan cheese Now the healthy and beautiful chicken salad is ready to plate. Here I cooked the chicken first, but if you want you can use any leftover chicken For veg, you can use bell peppers, mushrooms as well Try this recipe and let me know your feedback.
