Fruit Pizza Recipe in Few Minutes
Today I'll be showing you how to make this delicious and refreshing Fruit Pizza It's made with the soft cookie crust And then it's smothered in a cream cheese frosting.It's loaded with fresh fruit and berries. It is the perfect summer dessert Alright, let's get started. In a food processor add 1 and 3/4 cups of all-purpose flour, 1/2 a cup of granulated sugar, 1/4 teaspoon of baking powder, 1/2 a cup of cold cubed unsalted butter, 4 ounces of cream cheese Also cut in cubes, and then a teaspoon of vanilla extract.
Now snap on the lid and begin pulsing the blades. You want to pulse it for about 5 ish times or until the butter and cream cheese get down to like the size of a pea. Now add the dough into a large bowl and begin working it into a ball using your hands At first it might seem super dry and crumbly and it looks like it's not gonna come together Just be patient keep working in it and your warm hands are slowly gonna start softening that butter and it's gonna begin to take shape.Now place your dough on to a sheet of plastic wrap and then form it into a flat disc and then wrap it up tightly and then you want to pop it in the fridge for at least 30 minutes.
Now while that's in the fridge we can start working on the cream cheese frosting. In a large bowl add 8 ounces of softened cream cheese,2 tablespoons of softened unsalted butter, 1 cup of powdered sugar, and a teaspoon of vanilla extract Using an electric mixer beat all those ingredients together until it's nice and creamy.
Then set it aside Now take your dough out from the refrigerator and remove the plastic wrap and then you want to place it on a well-floured surface.Then sprinkle on a generous amount of extra flour on top and now you want to begin rolling it out using your rolling pin. So my pizza pan was 14 inches. So I rolled my the dough into 14 inches as well so you want to roll it out to whatever size pizza pan you have. During this process you might notice the edges of the Cookie crust beginning to kind of crack which is totally fine.Just kind of amend it together with your hands and continue rolling it out Also, make sure that your surface is well floured If you notice the dough like kind of not budging much That means it has stuck to your countertop and you're gonna have a really hard time getting it off So just flour it through during the process if you notice it's sticking.
So there will be a lot easier to remove So once you've got your dough all rolled out you want to transfer it to your pizza pan. So instead of just like grabbing it with my hands and running the risk of it falling apart I like to just put a rolling pin on top and lightly kind of wrap the dough around and just Quickly transfer it over to the pizza pan. And if it does fall apart, no big deal Just kind of piece it together works it in. It's totally fine. It's gonna get covered in cream cheese frosting.
You won't even notice Now you want to generously poke the cookie dough with the fork and then bake it at 350 degrees Fahrenheit for about 20 minutes So while the dough is baking you can start slicing up your fruit. In this recipe I just use strawberries and Kiwis You can really use any kind of fruit you like. So I sliced mine into about 1/4 inch slices so once your cookie crust is all baked and it completely cooled down you can start smothering on that cream cheese frosting that you made earlier and then you can begin topping on all of your fruit and berries For this fruit pizza recipe I just added strawberries, kiwis, raspberries, and blueberries But you can honestly put whatever kind of fruit you want.
People put like mangoes, bananas, Mandarins, grapes. I mean it's really up to you. Once you've got all your fruit on top You want to eat your fruit pizza within a few hours It just tastes better that way and the berries look a lot prettier that way but if you want to kind of extend how long your pizza can sit out I know some people do like a Fruit glaze on top.
It's actually really easy to make you just combine like a quarter cup of apricot jam You want to strain it and then you just mix it with like a Tablespoon of water and just brush it on so it looks really nice and shiny I didn't do that because we ate it right away.
